Ingredients:
-fresh corn
-olive oil
-kosher salt (I don't use this)
-cotija cheese (mild mexican white cheese)
-Mayonaise
-Cilantro
-Chilli powder
-Lime wedges (I don't use these)

Directions:
Peel back husks of corn and "tie back". You will use this as a holder later. Remove silk. Brush with olive oil. (add salt here if you like). Grill on medium grill. Turn using husks. Should turn brown when done. Rotate often.

Smire with mayo. Roll in cheese. Roll in chopped cilantro. Sprinkle with chilli powder. Serve immediately.

The whole cooking process takes 10 minutes. But it is labor intensive, so you have to have everthing else done. Tastes great!

Serve with any grilled meat and sliced tomatoes.
