I was up at a buddy's cottage this weekend, and what better way to enjoy a guys weekend than with good food and drink?

Breakfast on Saturday consisted of my first attempt at a fatty (which was fortunately assembled Friday night BEFORE the real drinking started!)

Started with some breakfast sausage which I changed up with some chili powder and some other spices.

I layed down a layer of Pepper Jack Cheese

topped the cheese with some scrambled eggs, roasted cubanelle peppers, diced fresh jalapeno, salsa and a little more chili powder.

I rolled it and wrapped it in bacon and put it in the fridge overnight

in the morning I got the smoker up to 325* and smoked with mesquite and oak (whiskey) chips for about 3 hrs. About 2 hrs in to the process, I brushed on a glaze of fresh lime juice, honey, brown sugar and chipotle powder.

I finished under a hot broiler for a few minutes to crisp the bacon, let it rest and sliced it up...

Needless to say, it was a hit! We all needed a nap after taking it down!!

My mouth literally watered when I saw the finished product (no kidding). I love fatties. Never made breakfast version before though. That's a great idea!

SmokinBlues please enjoy the site, but pulling threads up to the top, 2 1/3 years later, gets other people tapped for oversize pictures.

If the thread is more than 6 months old, please feel free to start a new thread about any given subject!

There has been a policy in place on these forums since Jan 4th 2011, that pictures need to be less than 650px on the longest side, so as to note break the forum format, and to allow the advertisements, (that help keep the site free for the members), to remain in view!

Jarhead added his warning to Chico, knowing I'd be in to break the images down to just links, because of them being over sized.
