About 7 years ago we went down to Guatemala City to bring home my little guy, we stayed at the Marriott and truly enjoyed their buffet, on Sundays among other things they would have short ribs (pork) braised in a green spicy sauce, man it was soooo good (gained 6 pounds in 6 days) I remember trying to get the recipe from one of the older ladies that worked in the kitchen but with the language barrier I never got it..... not sure if it's a Guatemalan dish or just central American....

This might be something to build from. I know it's beef and not pork. I'm thinking a can of chopped green chilies would help the heat factor.
I just saw this today and I am gonna try it this weekend. Looks good to me.
Should easily adapt to a smoker and make it better.
