Thank you Denny for your help.
I got some thick pork steaks, cut them up and marinated them in lime juice and salt all day while I was at work.
Got the lard melting in my Discada, used Denny's handy dandy thermometer holder idea
Grease up to temp and dropping in the meat.
Frying nicely.
Cool Blue Flame
Almost done.
Done.
Kevin had a good idea, fry some chips and the corn torts.
Plated with homemade salsa and pintos

Debbie, I was talking to Kevin right before dinner that night and he said he was going to eat til he couldnt function anymore...........havent heard from him since!! How much did he eat????

romex2121, Thanks, I brought the lard to just under 400°, but when I dropped the meat in the lard, the temp drops to about 350°, and it stayed around that until it was done. I prefer to just hold out my plate but sometimes I like it when k.a.m. holds out his plate  _________________ Got Fire?
