Definitely will be making plans to return to Godfrey, IL next year. The weather wasn't cold/rainy, we got a free case of beer from the organizer and they gave us doughnuts for breakfast. They provided all the meat for the event and then collected it after the competition to serve a fundraiser dinner. I cooked 2 butts, 1 brisket, 10 slabs of spares and 24 thighs. The cook went off without a hitch for the most part. The big meats got done several hours early (there were no weights on the packaging so I had to guess). After the big meats had been removed and while I was talking to a friend on another team I looked over and saw a lot of white smoke flowing from my stacks. So I cut the conversation short and went to investigate. I noticed a small grease fire under the reverse flow plate, so with the advice from my friend I smothered the fire and hoped for a lot of damage control. I still had the ribs and chicken on during the fire. During the turn ins we obviously were sampling the meats and were disappointed with the results of each bite. I told my wife that I wasn't expecting much in the way of awards with what I had tasted. The only thing I didn't sample was the chicken, so I at least had a small glimmer of hope ( chicken is a weak category for me). So we go to the awards meeting and my daughter asks me, "If we win can I go up to get it?" I tell her sure why not. I hate to get her hopes up but can't tell her no. So there we are sitting and the first category, chicken, gets announced. The organizer calls up 4th place and then announces "In 3rd place in chicken '82's BBQ Crew'" Holy cow that's us!!! Before I can tell my daughter to walk, she passes me and is walking proud with a huge smile on her face. So after a sleepless night, I walked away with gas money, the knowledge that we are able to win and most importantly a proud and happy family.

The complete results are going to be emailed to us, so I won't know how good/bad we did until I get those.

Looks good... Just curious how you got the brisket so dark???

For the bark, I used Big Ron's Rub In house seasoning, for the color on the side I just lightly covered it with BBQ Sauce.
