What is the optimum distance from the bottom of the disc to the burner?
From the looks of my disc it appears that only the center is getting the heat.

The consensus was 3-5" but I have a different burner than a lot of you guys use. Mine is a wok jet burner:
I found out later (after I built the burner assembly above) that the right distance for this kind of burner is 16"! These commercial wok burners are designed to entrain an enormous amount of air, and apparently need a lot of volume to combine it in. Otherwise the flame stays sooty no matter what you do. So I'll be reworking my cooker. I will probably try increasing the distance between the burner and disc, and if that doesn't work well, switching burners.
