I'm not new to smoking or grilling,I started out on a Little Chief my mom bought me to smoke the salmon I caught locally. I learned How to smoke ribs, lamb and pork butts on my dads weber putting the meat on one side and wood chunks on the other, low and slow. I now have a New Braunfels and plan on a build of my own,I've been welding over thirty yrs (started when I was 13) now, so I think I can handle a smoker.

Shawn,
Excellent to have you in the ring! You should kill that homebuilt smoker.. considering your experience. I really want to encourage you I second the question that A.G. put out there. Where in Cali.? Turns out A.G. and I are pretty close geographically. Let us know what type of a unit you are thinking of building. I am really curious about that.
P.S. I started out with a (big) chief and fish and moved to a Weber as well... good equipment. _________________ DPP FAT 50

I'm in WalnutCreek so not by either of you guys. I've been lurking for a while before I signed up and seeing builds like K.a.m's and other's has inspired me, but I have to wait until I go back to work, after that it's game on. I would also like to take this time to thank all of you for sharing so that others like me can learn more. |

Welcome dr.darkness!
I drove right through Walnut Creek last Saturday on my way to/from a golf tournament at Hiddenbrooke in Vallejo (I live in Manteca).
Any info on what happened to Bing Crosby's in downtown W.C.? They were always busy and then they were closed down. _________________ Scott V.
