I hope everyone that was in the path of Hurricane Irene is doing okay.
We were rather fortunate where I am.
The winds picked up Saturday night and into Sunday,
but overall a beautiful weekend.

My Mom & Dad held their annual corn roast on Saturday.
Usually about 30-40 people attend.
I decided to try something different.

I mixed together:
1 lb ground beef
1 lb ground pork
⅓ cup BBQ sauce
2 tbls Big Ron In the House seasoning
2 tbls onion flakes

Then flattened it out.


I flattened a pork tenderloin, and that was the next layer.


I then spread on about a half pound of pulled pork.


In between each layer I sprinkled some of Big Ron's HOH or OR.

Rolled up. Oh yeah, I made 2.


Wrapped them in bacon. I used thin regular bacon.
No bacon weave (Beertooth and k.a.m. style).
Each one was probably just over 4 lbs.


They set up in the fridge for 24 hours.

On to the smoker.


Ready to come off.


Resting, just prior to slicing.


Cut one in half - looking good!


Sliced and ready for the crowd. I ate the other 2 end pieces.Cool


It turned out to be a hit. Smile
This was my first time trying it without the weave and I prefer it.

Wow. I don't ever think I have seen a fatty sliced up so perfectly, without all the stuffing leaking all over the place. That is some fatty deliciousness right there.

How do you "flatten" you r pork loin? cut then hammer?

zski I think he's on to something........IT'S ALL MEAT !!!!

Nary a vegetable in sight.....except for onion flakes & they're
only combined w/meat ordinarily !!!

With one of these. Keep in mind it was a tenderloin,
so wasn't too difficult to flatten. Works great!
