Now I know what y'all are talkin' 'bout !!!!

This stuff's terrific !!!!

I started getting ready for Sunday's cook on Sat. AM....
Smoked some corn & white onion for salsa...


Added some small diced yellow bell pepper, red onion, more white sweet onion (fresh, for crunch) & black beans.
The coating was fine ground white pepper, celery seed (ground & whole), small pequin peppers ground fine & jalepeno infused olive oil.


Filled up 7 of those small tubs on the left~~~~> I guessed right to make a lot, as this stuff was/is screamin' good !!!

Then I got out the frozen, shreaded clod from a few weeks ago to get ready for big bean pots....
(this is before it went in the freezer, but it's still REALLY good)


I'm kind of half-way waiting for the mail as I'm guessing Ron's goods are going to get here...
Went about cleaning, sorting, packing the truck, picking up some extra supplies.........& wah-la !!!! the great smelling priority box gets here !!!
Mail was really late for a Saturday, but this is definitely one of those better late than never times !!!

I was wanting to dust everything with Hint of Huston AND the critter dust just cause they smelled so good.... but slowed
down a bit & just did HOH on 6 of the 8 flats of ribs...
Got going early the next AM...


Checked where I did the corn & some appetizers & the Stubb's coals were still smoldering....

Kinda getting to like that stuff......

So, did up the ribs, foiled to transport, & got to my friends place & got the beans & apps. going~>


The beans were great northern & pintos & also there was about 3/4 of a quart of reduced beef goo from the original clod cook (Added a small can of beef broth & cooked it down for 1-1/2 hrs. ~~> It's really good goo)
Put half the beans, half the meat, smoked for a time, then filled the pot almost to the top......
......This was all that was left...


The Big Ron's ribs got a quick (10 min.) re-heat~~~>


Along with some tri-tip


AND this is all that was left of THAT ~~~~>




There was a little bit of the pulled pork beans left, I'm amazed at how much folks ate~~~> only 20-25 people there & we sent a few small batches to the women's recovery house down the street....

The Hint of Huston ribs were damn near perfect, didn't get any close-ups (Mr.DeMille) as I was too busy dishin them up !!!!

Looks great! Love those beans, never thought of smoked corn but I bet it is great. Glad to hear you enjoyed the rub also Cool

I really appreciate the quick shipping ~~~came right in time.....
Didn't glaze this batch, as I thought it would be not quite sporting to make up something or use someone else's bottled sauce the 1st time out !!!
People were flippin' out over the taste, with just the rub!!! REALLY !!

For salsa, I cut corn off the cobs, as it seems to soak up more smoke that way, you can just pull back the husk, de-floss & pull the husk back around & smoke that way.
Some folks soak or brine before grill/smoke also....
It's really good !!
