You could do it separately but you would lose some of the flavoring /protection of the glaze on the meat.

Wow this looks good! wonder how pineapple pie filling would work? for the non daring people that want something more traditional at my house. might have to make both.

Doesn't pineapple contain enzymes that break down meat proteins? It may make the ham mushy.

Now that looks great and would of tried it for easter, but didn't see this post until now and Im already doing a shank with a Dr Pepper recipe I whipped up just to see if my ideas would work.
I'll try this though next shank I do.
