This might already be someone on this board, but I didnt see it. I'm looking to start some talk about pork steaks. Does anyone do pork steaks? (Or, is anyone from St louis would be another way to ask that.). If so, I'd like to hear about it.
Me, I use a sweet rub, a spicy sauce and cook them for 90-120 minutes at ~250. I don't put them in a foil pan of sauce at the end because I think it ruins the texture. |

| I only add salt, pepper , garlic powder. Indirect grill for the first 20 minutes. Then grill directly over coals until I get nice sear on them. |
