Hello all,
I've been purchasing my pork ribs at the local market for a few years now, and yesterday I discovered the Restuaunt Depot which is a large wholesale house. I have a few questions of my past purchases and hopefully new at the Depot. The only ribs that I would make were St. Louis style, I would buy the largest weight package thinking I would have the most meat on the ribs, but after trimming them I would also have a lot of meat taken off for other use. By purchasing the larger weight is the excess weight on the bones (ribs) or the excess I'm trimming off?
Second question: When I was at the Restuarant Depot they had two weight selections to choose from. They had (Medium) which were 4.5 lbs and above, and (Light) which were 4.2 lbs and below. Which one would render the most meat on the bones? Like my original question I'm wondering if the Medium weight would have just more meat to trim off and the meat on the ribs were the same as the light.
