My wife had a work trip to DC and had earned a free flight via rewards so I tagged along. (Hotel is on her work so all we had to do was pay for food)

She had a dinner for 2 gift certificate for Hill Country since they do events there. (UT alumni stuff) So I said lets check it out as the price was right (tip only).

They do a modified version of Lockhart/Luling service. Meats at one spot, sides at another. the biggest difference is the "meal ticket". They track what you get from each station then ring it all up after the meal. (works better for the city environment)

The "import" some items form TX (Kreuz sausage (twice the price), big red, DR Pepper from Dublin (though not any more, thanks Snapple Rolling Eyes ) and coke from Mexico)

It was not to bad. the use Ole Hickory pits, and have holding pits that "look" like Kruez's etc, but I am pretty sure they were electric.

The brisket had a decent smoke ring, and the flavor was there. Tender enough, but lighter on the pepper than it should be for TX. (we got moist)

Spare Ribs also nice and tender with decent smoke, light on spice.

Chicken which does not belong, but I understand why they do it, was probably the best thing.

Sausage, looked right, but again lighter on the spice than it should have been. I assume Kruez modifies the recipe a touch for them.

Sauce was too sweet and not hot enough for this TX boy, but a dash of the hot sauce on the table added to it made it much better.

Prices were fair other than the sausage ($5+ for one ring)

Sides were not that good; mac n cheese was gritty, and green bean casserole was just wrong.

Despite decent flavor and tenderness, all the meats were extremely greasy. Might have been an off day, hard to say.


If I had to move to DC, I would probably go back when feeling home sick, though I know I would frequent the bar (only place I have found with Shiner, but no Lonestar despite lots of neon for it)
