I had 4 dozen of these things to do this afternoon. I cooked extras, just in case I had a few FUBARs in the batch.
The method to my madness.

8 pounds Tyson Fresh Thighs (~16 thighs)

Marinade:
1 gallon Cold water
1 Cup Kosher Salt
1 Cup Brown Sugar
1/2 Cup Molasses
1/4 Cup Big Ron's Original Rub
2 gallon ZipLoc Bag

Mix ingredients in the bag. Make sure salt is dissolved before adding thighs.
Marinade in the fridge for 4 hours.
Remove and sprinkle Big Ron's under and on the surface of the skin.
Cook at 300 F until 170 IT is reached. (about 1-1/2 hours)
I started glazing them when they hit 150 IT every 15 minutes. These have 3 applications of glaze.
Roxy's Glaze + I added 1 tsp White Pepper. Oh yeah, good stuff.

The brine

The Rub

Chow Time

Thanks for lookin'

Well, I have nothing to add. Everyone took the words right out of my mouth. Ok, one thing. That is some nice smokey deliciousness right there.
