Wasnt 100% sure which area to put this so I just went with the general section. They do have smoked chicken in them
A friend brought these to a party a while back and not sure if anyone here has seen them. He called them buffalo balls, but basically they are a chicken wing hush puppy. These things are awesome!
The ingredients...
~Chicken, I used 2 breasts from a smoked chicken and shredded them in the processor
~4 green onions, chopped
~1 cup of shredded cheese
~1 cup of pepperjack cheese
~1 cup of wing sauce
~1 (1oz) package of ranch dressing mix
~oil for frying
~flour
~3 eggs, beaten
~bread crumbs
First 6 ingredients blended and mixed together. I forgot the pepperjack cheese so I used 2 cups of regular cheese and almost 2 cups of the wing sauce.
Once all blended together, I used a small ice cream scoop and scooped the balls onto a cookie sheet. Once I was done, I put them in the fridge for about 2 hours to set up.
Once out of the fridge, dredge the balls in flour, then egg, then the bread crumbs and place on a plate or tray. They were still kinda soft and hard to work with, so I think next time I will put them in the freezer and get them to set up a little better, they were soft and went from balls to small patties basically.
Got my grease to about 375* and cooked the balls for about 1 1/2 to 2 minutes.
These things are money!! I dipped them in some blue cheese dressing and they honestly tasted like a breaded chicken wing! You could use any sauce you like and I think next time I will dice up some jalapenos in the mix as well.

TrailerBuilder, Those look great, interesting idea.
You can't go wrong combining smoked meat and deep-frying.
I'm thinking the same as chuckied., those would be perfect on the disco. |

Dude.....Trailerbuilder...how did you fry these things? I have been messing with this recipe for 3 days now. First, my balls dont stay together easily, even after being chilled. Then, I rolled in flour and it was a challenge getting the egg to stick. when i finally did get some egg to stick, the bread crumbs stuck just fine. Then, I found 375 was too hot to melt the cheese inside before the outside was done, so i dropped to near 350. this prolly because my mixture was fresh out of the fridge. I also added about half of a beat egg to the mixture to try and get it all to stick together better. that just made it mushier. now i have a truck load of the recipe to find something to do with it, because i give up frying it hahahaha! Maybe enchiladas! |

Sorry to hear about your balls duckhead
When I did these for the post, I had a little bit of issue with mine, they didnt really fall apart, they were just really soft and hard to work with. I made them this past weekend for a friends gathering and I did everything about the same, but used less wing sauce. They were not near as difficult to handle this time. The flavor was still good and everyone seemed to love them. Might try mixing a little of the bread crumbs into the mixture as well, that is something I am planning on trying the next time I make them.
But, if you ask me, this mixture would make some killer enchiladas  _________________ X2 Finished Build
