My kids have heard me talking about getting a smoker for sausage. So this weekend they gave me a early fathers day gift. A master built electric smoker. So now I really have to start reading more. I have elready visited several websites for research. So any basic guidelines about time and temp would be appreciated.

From what I have read they don't produce enough smoke. I plan on getting one sometime soon, so I am going to look at adding a smoke generator.

I have this smoker, and they are absolutely great for holding low temps, but do not produce enough smoke at lower temps for sausages, I put a smoke daddy generater on mine and its a smoking son of a gun now, But now I only use it for Butts ans briskets, I have an upright freezer, with a hotplate in the bottom, and a johnson temp controller on it, I use this for my sausages, i can do about 80 lbs at a time in it, the master built could only do about 25 lbs,Tim
