I stuck a pork belly with some honey cure in the fridge last weekend, and it was ready for some smoke on Saturday. Since it was such a nice day, I decided to do a brisket too.

The bacon rubbed, wrapped, and ready for it's week long hibernation in the fridge

going in

coming out

took on some nice color

fried up

this is Harry's recipe for honey-cured bacon, and it is fantastic.

And, the brisket

rubbed and ready

smokin' away

ready to eat

Some info on that smoker please.
Is it home built?
I have an upright freezer I'm planning on converting.

The bacon looks killer. Yeah, if you can post about the cold smoker that would be helpful.

GF I cooked a bunch on Sunday, and we've crumbling it on salads with dinner the last couple nights. The stuff is awesome. I'm planning to do some more real soon.

k.c.hawg I'm very happy with it. I had some issues with the gaps at the lid on the firebox when I got it, but after cooking on it, I love it. Once I get it up to temp, it cruses right along without any fuss.

VS & Curtis Here's a link to my post about my cold smoker.
