Here ya go Troy, after seeing the text, I'm sure ya wanna know WTF is that? Laughing

A friend of mine came over today and brought me some zucchini and yellow summer squash.
I love steamed squash, then I got to thinking, “I can do this on the disco”.
So I got busy on Google and found a bunch of recipes for all different ways to cook it.
I was looking for a good tasting side dish to make. There were several recipes, but they looked like they just need something else.
Usually if I can't pronounce it, I won't eat it. But, never say never.
So after reading through about 10 of them, I came up with this.

The ingredients




Preheated the disco and sauteed the onion and added the squash.



Added the drained corn, Rotel with Habaneros (won't do that again) and minced Garlic



Simmering and reducing the liquid



Added a little Salt & Pepper, stirred it up. Done.



Dished some up and sprinkled Mexican Blend Cheese over the top. Awe YES, mighty tasty.
Beats the heck out of just plain ole steamed squash.



Jarhead's Calabacitas on the Disco

1 med Onion, coarsely chopped
1 small Zucchini, Sliced
1 small Yellow Summer Squash, Sliced
1 can Whole Kernel Corn, Drained
1 can Rotel Diced Tomatoes w/Jalapenos, undrained
2 cloves Garlic, Minced
Mexican (Taco) Blend Shredded Cheese
EVOO
Salt & Pepper to taste

Heat up disco, add EVOO. 
Saute onions, until slightly browned.
Add both squash. Continue cooking until soft.
Add drained corn, Rotel and garlic.
Simmer to reduce liquid.
Serve hot with cheese over the top.

Note to self: Don't use Rotel w/Habaneros next time.
