After seeing Troy's (trailerbuilder) post the other day highlighting Breakfast on the Disco, I was hungry this morning. After a Vegan supper of squash last night, I was starving.
I even thought of a Mickey D's Breakfast Barf-arito. Naw, not that hungry!
Back in the days of going camping and fishing with my kids, I made something I called a Country Burrito. So Ladies and Gents, here it is.
Got my girl all warmed up and slipped the meat to er.
I'd better just shut up and give you the recipe before I get a Time-Out from the Big Man.
Sliced up some Irish Potatoes (Red or Yukon would have been better)
Now we're smellin good. The onion is in.
Now 6 lightly beaten eggs to the mix.
Moved all of that goodness off to the warming tray (did I mention I love that tray) and heated up the smallest d@mn flour tortillas in the world. I won't buy those again.
A little Mex Blend Cheese and Rooster Sauce, and I must say, “Breakfast is served”.

Jarhead's Country Breakfast Burrito
2 med Potatoes, thinly sliced
4 slices Bacon, cut to 1/4" wide pieces or Sausage
6 Eggs
1 Green Chile, chopped (NM Hot)
Salt / Pepper
Mexican Blend Shredded Cheese
Rooster Sauce
6 Flour Tortillas (Bigger than these)
Preparation:
Potatoes - Slice with grater or cut into thin slices
Sausage or bacon - crumble sausage; cut bacon into 1/4" pieces.
Add Olive Oil (Canola or Veg) to disk and heat
Add meat, cook meat then add potatoes
Cook meat and potatoes till done and add green chile
Season to taste
Add eggs (depending on how many you are feeding, picture above had a half dozen eggs; feeding me (6 people)
When done heat up some flour tortillas on the disk for a great Country Breakfast Burrito.
Goes great with fresh hot coffee, ice cold beer or a Bloody Mary.

Jarhead, I'm loving this.
I gotta thank TrailerBuilder again, now that your going on the disco, I may not have to fiigure out what to cook again.
You are banging out some good eats brother, I will be "borrowing" all of them.
BTW, I'm gonna try your chicken in the a.m., I'm sure it will be good if I don't F-it up.  |

I fixed breakfast on mine both days again this weekend, the disc is pretty much becoming the weapon of choice in my cooking arsenal.

Yeah Jim, I know what it is. I've made it before. But I only had it smoked and ready to eat. I don't buy that colored and seasoned lard that they call Chorizo in the store.

I agree, if I wanted to eat pork salivary glands, I would buy them. I was at the house to do some mold remediation (leaking water heater) but I forgot to look for the recipe. I order my Mex Oregano from Sweet Freedom Farm plus several of their dried chiles that are hard to get around here.
