Ok I have used the 2 different planners getting 2 completley different set of numbers. Either I'm not using so ezzy planner correctly or I'm not fully understanding how it works.
I need to quote 100 people 4 meats (pulled pork, brisket, ribs and chicken) 3 Sides (tater salad, slaw, smoked beans)
The quantities so ezzy calc gave me were huge. It seems it is calculating for 100 people for each item IE 50 slabs of ribs.
Then I tried the other BBQ workbook 3.0 and brought ribs down to 25 slabs 20 lbs ppork, 25 brisket, 22lbs chicken thighs.
Please help me with the quantities for 100 people 4 meats BBBacks, pulled pork, Brisket and thighs. 3 sides beans, slaw and tater salad.

My 15 year catering experience tells me...
2-3 ribs per guest= 25 slabs (@3 ea)
2-3 oz per guest= 18.75 bls (@3oz ea) COOKED brisket
2-3 oz per guest= 18.75 lbs (@3oz ea) COOKED butt
you said chicken thighs so i assume it is ONLY thighs so..
I would cook about 75 each (not all will eat them).
If you are figuring hind quarter (leg/thigh) then I would cook 50.
The sides, figure 4 oz per serving per guest. so a 5 lb bag of slaw mix will serve approx 40 guests.
A pound of potato salad will serve approx 4 guests
Beans, a #10 can (depending on what else you add to it) will serve approx 25 guests.
You can buy serving spoons/scoops that hold 4 oz to make it easier. _________________ Where rumors end and legend lives forever... |

You are best using row 25 and set the number of ribs per person, due to the constraints on me at the time, I set the ribs at 1/2 a rack per portion, as that's what I can easily put away as a single meat.
This was why I included row 25.
