So the wife's been puttin' up all kinds of stuff, mostly jellies,
but some string beans & other things too....

Says she's got thiis recipe for corn relish that calls for, she "THINKS" ( key word here, folks) 20 ears of corn.....
So i make a call out to this farm that's 20 miles away, that has screamin' good sweet corn
& well worth the drive if it's time...Yep, they say, 1st good batches are comin' in.......
Go out & get 2x 24 bags (plus 3 free today only)& 1x 7 bag (plus 1 free today only) 62 ears of corn......

Leave a few with each of the coworkers, a few with mom & her neighbor, a few with my brother, & 4 each with the
neighbors on either side of me...... come in after all of that & she informs me the "RECIPE" took 6 ears.....

Time for Smoked Corn & Black Bean Salsa

1st,set up the fine screen expanded sheets(two at a slight angle, clamped)

Then shuck & carve off 15 ears...

On to the smoker with alder shread @ 250 for about 40 minutes...





Stirred with a spatula several times, you can see the smoke pickup here ~~~>




Two batches like that & two smaller batches of white
sweet onion....



I've found that carving off the corn & chopping the onion small like this really picks up the smoke esp. the corn....
Yeah, it's more work, but it turns into a lot better end result, to me....

Makes up one plump half pan...




Then fold in about a teaspoon of ground white pepper, a teaspoon of ground pequin chiles,
two 29 oz. cans of small black beans (RINSE real good !) & enough olive oil to coat the mix....
I used a Meyer lemon infused olive oil, so I suppose half a lemon with a light oil would do.....

I've also used a jalepeno infused oil on this mix with good results.....



I gave each of the neighbors a tub of this....One had a dinner party, the other went to a dinner party & took it along...
Wildly good reviews everywhere....
I had some & thought it had way too much white pepper & too much smoke, BWTFDIK ???? Shocked

Dang that looks good Ken.
I can picture a big ole tuna steak next to that on a plate.

I've been making a similar one with grilled corn, I'm gonna give this a shot, it seems like it should be a winner. Wink

Thanks guys....

Stuff's real good, the smoke, the spices, & those 3 veg items work good together....
Just in case this wasn't as good as I remembered, I did the tater salad ~~~>



& a small bucket 'o 'Turds & choinks....



Other spice I've used along with, is granulated garlic....

Next might try adding in (one at a time) some of the various McCormick's GrillMates things...
they seem to be coming up with some fun stuff lately....

PS: Cedar planked TUNA !!! Yeah !!!
