the bacon was cured with morton tender quick. I did a combination of several things.Pure vermont sugar, pure vermont maple syrup, pure homemade honey, garlic powder and a few more spices. I did not cold smoke it, I smoked it with hickory and pecan and did not check internal temps just smoked to my liking. I have done a couple hundred pounds in the last few months and can not keep it
I also recently did some wild hog off my familys farm and it was better than the domesticated hog. Here are a few pics

I gotta learn to resize my pics that are in my photobucket account I tried and it appeared to have worked but I got a link on one of them. OH well I am not exactly computer savy as you can see

I tell you what it is addictive I love it and it is fun tinkering with the process. I told my wife if she found me feet straight up in the air, i guess it was because I overdosed on bacon!!!!!!! LOL!!!!

After making my own bacon for the first time, store bought doesn't cut it any more.(although it works in a pinch) Wink
