It's been forever since I've last been active on here but life gets in the way.

I've been making this for my family since farmers market is in full swing. It's honestly one of my favorite things now. The curry sauce would be good on tinfoil.


Roasted Cauliflower:

Cut head of cauliflower into slabs. It's hard to keep together so try to keep the stems attached as much as possible.
Toss in olive oil and roast at 425 until caramelized on both sides. Normally takes me 30-40 minutes on a dark pan. Salt and pepper when out of oven.


Curry sauce:

1-2 shallots minced, or 2-3 T minced sweet onion
1 clove minced garlic
1-3 t curry powder depending on taste (I use 1T)
2 T white wine vinegar
1 T honey
Salt/Pepper

Saute onion and garlic in 1T each butter and olive oil til soft. Add curry powder, salt and pepper and cook a bit longer. Add vinegar and honey and reduce slightly. Take off heat and let rest. Once cooled a bit blend til smooth.

Then mix with 1/2 cup mayo and 1/3 cup plain greek yogurt. Adjust seasonings to taste. I refrigerate for a few hours to let flavors meld.

It's seriously good stuff, enjoy!
