well, I gave brisket a shot for the 1st time sunday. I pulled it out of the freezer sat night to thaw and was supprised to see that what I thought was just a point was actually a point and flat, only about 6lbs worth but was both. It thawed overnight and I got up sunday morning and rubbed it up, started the charcoal and got her on the uds. She cooked from 9:30AM-6:40PM to an IT of 204 before it was probe tender. I had planned to do burnt ends with the point but was tired of waiting on it and had to go pick my wife up from the airport soon so I just sliced for sandwiches. The days temps were 20-22F with a NW wind of about 20mph all day. I was pleased with the way the UDS cooked and held temp. I used RO lump and Pecan chunks. It tasted amazing and had a nice smoke ring. I will be doing another that is similar in size just as soon as I have the time to do it.

rubbed with salt, pepper, onion powder and garlic powder

Done and rested for 1.5 hrs in the cooler.

The Brisket looks real good Jason. Very nice color and it looks super moist! That was a good test for the UDS! I had the 20 mph winds with probably 30+ gusts while doing ribs on Saturday but it was high 60's to low 70's. It was still a hassle.

Thank you gentlemen. In all honesty the outcome has a lot to do with the help from you all!! This "hobby" has brought me and my stomach much joy. I am seriously greatful for the wealth of knowledge that has been shared with me and I plan to share that same knowledge as I am able. Thanks again for all your help guys!
