Our daughter and new son-in-law came up for Christmas, so we decided to have a few people over for pulled pork sandwiches on Sunday. I found some red peppers (don’t ask me what kind) similar in size to the jalapeño’s, so I made some Christmas ABTs earlier in the week and froze them to cook just prior to the party. I stuffed them with cream cheese and a sliver of grilled sausage. Be sure to wear rubber gloves when handling the peppers, and keep your hands away from your eyes.

I also wrapped some pitted dates with bacon and my friend Lou named them CTs. )The C stands for Camel.) They were also frozen for cooking later.

Friday morning I rubbed two Boston Butts, wrapped them and put them back in the refrigerator.

Then around 4 PM on Saturday I put them on the smoker.
Stating the smoke

I kept the temp (at the grate) between 200 and 225 overnight, spritzing from time to time, then in the morning I let the temp get up to 240. After about 17 hours (low and slow) the internal temp was 192. I took the butts off and double wrapped in foil and put in an ice chest.

Prior to smoking the ABTs and CTs I took them out of the freezer and let them defrost just enough to separate and put on the grate. I placed the CTs on non-stick foil with holes punched with a fork to prevent them from slipping between the grates.

I smoked the ABTs and CTs at 225 to 250 for 2 to 2.5 hours and they turned out very good. This was the first time I have done CTs and they were very popular.

After letting the butts sit in the ice chest for about 5 hours, I pulled them. As you can see from the pictures of the first butt, the bone came out clean, and the butt was very tender and juicy.

Olive, my son-in-law's dog, would have preferred some meat on the bone, but she still loved it. Sorry I don’t have any pictures of the pulled pork, but it was good. The party was a success. Merry Christmas and Happy New Year to all.

Thanks Canadian Bacon, 1buckie, and Big Ron for the nice comments. I didn't take any pics today, but I smoked a 14 lb boneless prime rib today and it turned out great. (If I do say so myself.) I took it off at 135 internal, and it was a very nice pink throughout. Used a little pecan. It was just our daughter and son-in-law, and they are leaving to go home tomorrow. Guess who is taking a nice big chunk of my PR? I hope you all have a Merry Christmas!
