Hey,
The wife bought a 3 lb eye round roast, so I thought I would give it a try, love a challenge. So I gave a rub and wrapped for a few hours.
Took it out of the frig and let it get room temp, covered what there was of a fat cap with bacon. Had the gas smoker at 200 with hickory and stuck it it.
Smoked it till the internal was 118 about 2 hours or so. Pulled it wrapped it in foil for 45 mins. Then finished it the oven at 400, internal 135. Thin sliced it and served with garlic mash and green beans.
Well it came out great, just a little tougher than prime rib.

The description sounds pretty darn good, it probably happened......

jamiemac, Sounds pretty good......was the outside crispy from the last high heat part?

Actually hope your kidding. No I didn't take pics this time. The first smoke I didn't. But you can look up the Filet Mignon that I smoked, there's pics of that.

It actually had a pretty decent crust out of the smoker, not great but decent. Oven put up to about 6-7 out of 10.

Seeing as your the new guy in town...we will forgive you this one time.....we have a no pics it did not happen kinda thing on the ring. Very Happy
We will let you make up for this on your next post.Eye of round is a bit of a lean,tougher cut but has great flavor...sliced very thin it makes for some nice sammich's. Very Happy
