Stuffed Pork Tenderloin

Got a couple of pork tenderloin

Removed the sliver skin and butterflied them

Seasoned them and spread spicy mustard on the inner side

Covered with Parmesan cheese and dried thyme and oregano

And then topped it with a mixture of sautéed spinach, onions, garlic and lemon juice

Placed a smoked sausage in each

Rolled them and tied them up


Grilled them

Then let them rest for 15 min

Sliced them and served them with Basmati rice, grilled Granny Smith apples and grilled corn on the cob Smile

Very tasty Very Happy

BBcue-z...you turned out two very nice looking pork tenderloins...interesting choice of ingredients used to stuff them with,
but if it tastes as good as it looks....and it looks good,you got a winner. Very Happy

I used the mustard as glue, as it’s used in many BBQ meat, it holds the fine ingredients, yet it melts away leaving a subtle flavor on the meat. The spinach and Parmesan mixture is something I use as stuffing for many Italian/Mediterranean dishes and has very nice flavor. It also nice as a side dish on it’s own. The smoked sausage compliments the grilled pork (pork on pork) and gives a nice hint of smoke and moisture. I think it was a good combo of ingredients Very Happy

BBcue-z - Another awesome looking cook with great looking pics. The loin has an interesting combination and I bet tastes great. The apples and rice should be a great side with the pork.
