why rinse chicken with lemon juice?

I was reading somewhere to always rinse/wash raw chicken in lemon juice before cooking. What's the reason for this, other than making it smell nice and citrusy?

Im thinking the acid in the lemon juice might kill the bacteria on the outside.......I might be wrong, but thats kinda what I get from it.

Instead of asking why wash in lemon juice, I submit, "Why not wash in lemon juice"? Laughing

I don't know, first time I have actually heard that one. The antibacterial approach makes sense, so does falvoring, and it should even tenderinze the meat just a tiny bit. A little lemon flavor in chicken is never a bad thing either.

I would suggest it has more to do with tenderizing. Cooking is plenty antibacterial. Moreso than lemon juice.

It's to help with any nasties on the chicken....a lot of Asian cookbooks tell you to always wash chicken in a mixture of lemon juice and salt.

Strictly done as a cleanser. A quick wash will not tenderize anything...neither will it flavor anything.

Folks in the part of the Caribbean that I'm familiar with will wash their meat in water with a squeeze of lime in it to be sure it is clean.

In America we get our meat pretty well clean before it is packaged.

we folks in the Caribbean don't like the smell of the fat etc
its commonly called a "fresh" smell

some people even go as far as to dust with flour then rinse off after the flour has absorbed any funk on the skin

I've been known to wash my chicken in buttermilk then dust it with flour just before putting it in hot oil.
