Made some Andouille today and some breakfast pan sausage (Georgia Cajun). Gumbo on next Saturday. Pics

Looks great Tom! Care to post a recipe?

I'm getting ready to order a hank of casings from Syracuse, and if I ever get some down time from work, I've got about 6 different sausages to make......I'm gonna pack the freezer! I really want to make andouille.

Ours will be seafood and sausage. Shrimp and oysters primarily with some spckled trout. Sorry but no okra or eggs in my gumbo. Can't wait. Hope to see you and Debbie before long. Tom

Looks amazing!! Glad you liked it, those pictures made me want to make some more right now ... and that's saying something considering I just finished 12 hours overnight shift, lol! I never did get round to posting my gumbo recipe, I am always so tired I forget ... maybe when I wake up ... and maybe it is the canuck in me but ... eggs in a gumbo? Not my cup of tea k.a.m but I won't hold it against you ... Wink lol
