Well Buckie all I gotta say is you know your turds for sure.

Whats the sauce or cheese on the pretzels?

I also recently jumped on the pretzel band wagon and found a really good and simple receipe for them and last night I made up some rolls and used some left over rib meat for sammies. Well I gotta say will be doing that again.. most likely tonight

I saw some people using something sort of like this a long time ago to do sausages, mostly & other stuff in a room size smokehouse w/ sliding tracks built into the ceiling....wish I'd paid more attention to their methods....





I get it at Sportsman's Warehouse for a decent price, but a lot of the hardwares that have grills, at least around here also have it.......
Like it says, made for the fish & game smokers, but it will work all kinds of ways..... Cool
I'm also saving the cleared sawdust from plum, oak & pecan when I cut that stuff, but it's a bit finer.....better for cold smoking in the trays or tubes, I would imagine... Very Happy

Go get 'em Bugsy.....that's a really nice one, "J" Code, older, almost perfect condition, as far as I know.....

Yeah, just a hit with me & the dawgs....the wife kinda goes on about doing her own stuff.....

She's in there making something called "Chile Quias" ?...I think that's spelled right?

Steak strips, braised in pan, stewed with onion, peppers, then tomato sauce & paste & some spices, I don't quite know what all else, dumped over homemade chips with grated mozz over the top to melt.....

It's really good & she eats on a big pot of that for days, while I concoct things from leftover 'Turds....

Like this ~~>



Lime pickle & sliced 'Turd sammie, using the cr. cheese & spiced chix breast 'Turds.......a good vote for a tightly wrapped 'Turd, as then they can be sliced 1/4" thick lengthwise for this type of use.........The 'Turdpickle Sammie

OK, KAM......I'm a gonna put Mrs. Buckie on the phone......hang on just a minute.......... Surprised

....OK....here we go............

you will need 2 pounds round steak (can use top round, she says it's more tender) cut into cubes, 2 medium onions sliced, 1 can El Pato(7 3/4 oz) salsa de chile Fresco, 2 cans(28 oz) diced tomatoes, 1 (15 oz) can tomato sauce, 1 can (27 oz) whole green chiles cut up, 3 tablespoons chili powder, 1 tablespoon ground cumin.

put a little oil in pot heat then add steak until brown then add onions and let them limber up. Then add the rest and about 20 oz. water and let simmer almost 2 hours. Fry up some corn tortillas, cut in small squares and grate some Monterey jack cheese and enjoy!!!!

And, it'll cure hangovers....... Shocked

Ahhhhhh....Chilaquiles! Good stuff right there! I know that dish well and make it occasionally (I think I'm part Mexican Very Happy ). Traditionally made with leftovers. It's really good after you assemble it and bake, on low, for a few minutes. I like Crema and Cilantro on mine.

She don't bake, just throws eveything in boiling hot & the chips soften some, with crispy outside edges.....this stuff is really good...... Very Happy
