I am confident in my rib technique. I have had the same results 6 times now with the new method.
the only variables are how much apple wood to use.
I will now start playing with spare ribs instead of BBs so I will be ready if I find a rib competition to enter

I had some in-laws in town, so I slapped $50 of pork on the UDS
