In an offset the water pan and the point of a brisket would be placed closest to the fire box. Where do you place them in a reverse flow?

Welcome to the ring Spyke1969, looking forward to seeing some pics of your cooks. Smile
While I do place my briskets in my offset with the point facing the firebox I do not use water pans.
Depending on how the R/F plate is set up on a reverse flow as far as extreme radiant heat at the firebox side I tend to treat them as I do an offset unless I have the briskets close to the turn around area then I place them with the point opposite the firebox.

Buy a few cans of biscuits and spread them around in the smoker to find the hot spots.
With the reverse flow I built it takes a while (10mm thick) for the heat to even out between both ends.

I found it best if I light it, run it up to 350* then back it down to 225 and the cooker is even within 10*.
