So I bought the large Assassin gravity fed and I have a funky smell / taste on my food. Come to find out, the previous owner cooked wild boar meet. Makes since, that is the smell I smell. So I am going to hit it with oven cleaner and then pressure wash it. Then I plan to run the smoker. How long to remove any and all trace of the oven cleaner? Afterwards, I plan to coat with vegetable oil and then run at 275 for 8 hours for seasoning.

Any suggestions?

As far as the oven cleaner goes I would follow the directions. I believe easy off has one that is a spray on wait then wipe off.
The re-seasoning I would heat the cooker to at least 325° and run he for about three hours then cook about 10 lbs of leg quarters.
I hope this helps. Very Happy

Extremely! I sprayed with easy off using the cold oven method and left it on for an hour. Pressure washed everything and then fired up the smoker to 275. Someone told me to run that way for 48 hours but I was thinking that may be a bit much (why I am here). I have now been at 275 for 12 1/2 hours. I plan to lload up before bed and let it run through. If I do a case of bacon (love bacon LOL) would I still need to spray everything with veg oil? When i smell my smoker I know longer smell the wild boar like I did before.

I would still lightly spray the Pam. The bacon will not season the walls just the grate and bottom.

In my opinion seasoning should be done at temps between 300° and 325° and should never take more than three hours.

LOL, have only used the rotisserie once since I got the Assassin. I do prefer the taste from the beast but I like my sleep better.
