I have allways herd that when selecting a brisket one should get one that is floppy and not stiff Embarassed .......

So I have done this for years now......but just started bending the briskets by hand and forcing them to be more floppy. Just wondering if anyone else does this and if they think it helps make the brisket more tender. Ill buy a brisket several weeks ahead of cook time and forcefully bend the briskets every day or two.....they get super floppy.... It seems to help, but it may just be me thinking it helps too.

I don,t know if that would really have an effect or not but I suppose it could possibly be helping to stretch and break down the muscle fibers in a way . Does,nt seem realistic tho.

That's a good question. I have always thought that the "easy bend or not easy bend" was an indicator of fat content. Don't really know if an easy bender indicates a little or a lot. If that's the case, it wouldn't seem like any more bending would affect it.
Generally, I just grab whatever is there--once you cook it for 8 or 10 hours, it's all good. Wink
