I received my CTO yesterday afternoon. I uncrated it as if it was Christmas in Summer. Very Happy

I can't wait to test it with a couple of briskets, ribs, and pork butts this weekend. Lets hope I don't mess things up too bad. But first I need to purchase a propane tank and calibrate the thermostat.

I made time to hook-up the propane tank to test the CTO. I don't know if it is normal or not, but I shut it off 8 minutes into testing since there was a strong odor of gas, which was present to the left and outside of the pit, and inside the cooking chamber. I checked all fittings. Everything checked out ok. I am going to contact Ole Hickory tomorrow.

The only thing missing was the smoke ring. There was plenty of smoke coming out of the vents, but I take it the briskets didn't want to cooperate. Very Happy

Nice cooker Papagallos. That brisket looked great. If the absence of a smoke ring bothers you to bad send the brisket to Arkansas and I will dispose of them for you post haste.

Gents,

To be quite honest, I was worried that the briskets would have that "oven" texture and taste. I was blown away with the CTO's ability to smoke brisket that would be the equivalent of a traditional stick burner's brisket. I parted most of the two briskets to several friends. After getting some feedback, which was stellar, I told them about the CTO. They could not believe that I did not use a "regular wood pit."

To say that I am happy with the CTO is a huge understatement. This was the first test run, so I can't complain. I am sure that I will produce better smoked meats as I continue to use it more and more.

The CTO has been rocking out awesome briskets. I made my first sales today. I only smoked and sold 4 briskets. They turned out awesome. Each client was extremely satisfied.
