Been reading the board for a week or so. I found the board as I ordered a Traeger grill (their new BBQ400 or "Select" model) and this place came up on a Google search. Looking forward to trying stuff from here on the new Traeger and also hoping to smoke some sausage on it too as my Sausage Maker 20# little smokehouse is getting old. Okay, on to the results of my work over the last 10 days.

First, smoked Andouille sausage, raw and then smoked.



Next is a batch of roasted poblano peppers, cilantro, and southwest spices:


Last was what I made this morning. Six pounds pork butt, two pounds veal shoulder, two pounds back fat, one pound high temp pepper cheese cubes, 16 ounces heavy cream, four eggs, a cup of scallions and spices including ground ginger, nutmeg, and white pepper. Very rich bratwurst recipe here:

It all looks & sounds great. Very Happy But if you do not resize your pics the Bear will eat your sausage...
