It would make a helluva gasser purdy quick, for wings, steaks or burgers, on one end and charcoal or a warmer on the other,2 separate lids...with wheels and a tongue on it.

it was a challenge Smile

we pre cooked all the ribs ahead of time, our smoker can hold 48 racks at a time, so every day we did 3 batches starting at 5am going to 10-11pm we did this for 5 days (with a competition in the middle of that)
during the event we started serving ribs at 7am and we didn't stop until the event ended around 6:30. clean up and a long 221 miles home. to add to the chaos i also had an event the next 3 days(2 drop offs and one full service catering for 150 people)

500 racks of ribs cooked in the refer trailer

Cooling the ribs down, once they where cool we wrapped them and put them in the stack

ribs just needed to be brought up to temp and sauced

friends from culinary school that helped me out and my rib cutters Smile

the group pic from the event
