I personally like rabbit, but there are a lot of people out there that stay away from wild game. Unless the competition is a wild game type event (exotic), then I personally would probably go with chicken, beef, seafood ect.

Good Luck at your Competition

I am also thinking about wild game (venison) for the anything butt competition at the "Smokin' In The Valley" KCBS sanctioned competition in Maggie Valley, NC. Any thoughts or should I play it safe with seafood and such? We make a pretty mean venison ham, but I don't know how the judges will score it.

Cook what you want guys, it is all for fun. However, remember, you don't want the judges to cringe when the dish is presented. I would try and play it somewhat safe. Seafood pastas do very well.
