I got a 9 lb. brisket in a corning bath at the moment intended to become a pastrami. I'll probably smoke a pork butt also since I'll have the cooker fired up.

We are competing Saturday so that means either left over brisket, ribs, and chicken or if I am lucky the sponsor will take all the BBQ home with him and I will get fried wings, livers and gizzards. Very Happy

We have 10 lbs of loins & a small brisket curring , also doing 2 briskets , 2 butts & 4 racks of ribs . Smoked up a bunch of cheese a couple of weeks ago .

I found a 40# case of jumbo wings hiding in the freezer...Just hope its enough for the 4 of us....lol

Yeah! Fried chicken livers and gizzards sounds great. A great snack/finger food IMO. I think I'll do some Sunday, since I was planning on smoking, then frying some wings and onion rings anyway.

Maybe just scrape the goo off the bottom of your smoker and slather brisket before, during and after cook with it....or google a certain meathead for some TRUE bbq advise Confused

3 racks of ribs, at least one of them asian style. 6 lbs. of pastrami. Pig candy. chorizo stuffed jalepenos, andI'm making shot classes out of bacon.
