I have come into possession of a medium sized snapper. Any thoughts, ideas, or suggestions besides turtle soup?

Works great soaked overnight in brine, coated with Everglades seasoning / flour, browned, & simmered in gravy for an hr. or two till tender. Serve over rice...

It's a really tough meat with a flavor similar to gator. Best braised in a liquid and served as a stew. I've cooked a number of snappers over the last 20 years and I have to say that the meat is so hard to get to, it hardly seems worth the effort.

The only way to eat turtle is battetr it and fry it!!!
