Hope everyone had a good Easter Very Happy

We had a get together with some family yesterday for an Easter brunch and I decided to try my hand at some Armadillo Eggs...Scotch Eggs...whatever you want to call 'em...they were delicious. I don't know why I haven't made these before Very Happy

Started out with 14 hard boiled eggs. Actually tried steaming these for the first time...they were much definitely easier to peel than they are when I boil them.


Wrapped the eggs with 4lbs Jimmy Dean sausage, coated 'em with my BBQ rub and stuck 'em in the fridge to chill out overnight.


Sunday morning, set up the kettle for indirect heat and threw a couple small chunks of apple on


Cooked em for a little over an hour at around 350



Ended up cutting them into quarters and made a mustard dipping sauce to take too...they did not last long. Very Happy

Mustard sauce:
1 egg
1C mayonnaise
1/4C mustard
2Tbl granulated sugar

Mix ingredients together in small sauce pan, over low heat, Stirring occasionally. Remove from heat when it just starts to boil. Let cool and store in the fridge.
