Any suggestions to what temp to hold butts, ribs, and brisket in a holding cabinet for several hourse prior to service? Thanks for any info |

I keep my Metro at 160°... bottom can get very warm just above water pan, middle sometimes runs a little cooler...I used my wire probes to 'map' it out just like I do on a smoker. Better safe than sorry - plus, if you have moisture in your cabinet quality will remain good, if no - wrap them or foil pans they are in to maintain moisture. _________________ Money Maker
