Our turn in for Cooking Channel's Big Bad BBQ Brawl. The theme was a Viking's influenced Bone in meat Brawl. I smoked a saddle of pork. Served with a caramelized bacon, onion and apple sage cream sauce and garlic smoked veggies. We actually turned it in family style with the roasted 1/2 saddle and a tray of veggies. People forget that the vikings cooked with wood too. We were told the show will air just after labor day. Shannon turned in a Caribbean style smoked goat leg and fixins. Apparently Vikings will eat anything while pillaging! We had plenty of smack talking fun, especially with their team cooking goat! Special thanks to McDonald's Meats in Clear Lake for butchering a delicious custom cut for the challenge!!! We couldn't have done it without that awesome roast.

Anybody else does this show make sure you also serve bread and dessert on your menu even if they just ask for a meat and side, because they will. I didn't realize even after watching all the episodes as homework. I also wished the judges would have been aware of the secondary theme, Vikings influenced. Have your menu description include the theme. Remember it's their game your just playing it and have fun with it. _________________ The lessons are in the customer's criticism.
