CATFISH JERKY

Buy catfish fingers or strips. (Cheaper than either whole or fillets Very Happy )

Marinate for a couple of hours in a mixture of equal parts of hot sauce, soy sauce and lemon juice.

Smoke at about 160 degrees or so up to 210 degrees until fairly dry. MAybe two or three hours depending on temp. You don't want to dry this as much as a regular beef jerky. It isn't extremely sensitive to the temperature.

If you are smoking something else at a different temperature, just put the catfish in also. Watch it from time to time to make sure it doesn't cook too much.
